Armenian cuisine began to take shape in the ancient state of Urartu, which existed in the 8th century BC on the Armenian Highlands. The locals ate a lot of meat, hunted wild sheep, deer and goats. They cooked over a hot fire, stringing pieces of meat on sticks.

The most ancient recipe of Armenian cuisine is kaurma (ղավուրմա/տհալ). This dish has been prepared for over a thousand years. Large pieces of boneless beef are salted and left for a couple of days. Then the meat is boiled and fried, transferred to an earthenware dish, filled with melted butter and stored. In some Armenian villages, pots of kaurma are still buried in the ground. In winter, pieces of kaurma are taken out as needed and eaten with boiled potatoes and onions.
